Honey Soy Glazed Salmon


Sometimes you find recipes in the most unlikely of places. We had gone out to lunch with some friends and after lunch decided to pop in to the Apple Store next door. With a full belly who doesn’t like to go and look at all the fund gadgets and newest tech. While playing with a new iPad I came across this recipe that someone had put on as a demo and decided I had better try it. So...I took a picture of the recipe...easier than writing it down, right?

I love a straight forward and simple yet tasty recipe. This is one that you will love I am sure of it!

This recipe is especially great because it uses things that are in my pantry most of the time. Once I had collected all my ingredients it was time to get things going. I mixed all the ingredients, portioned the fish and generously coated the pieces.

As you may know, I love my smoker and use it for both smoking and BBQing. (Is that a word?) It is so easy to use and the taste...yes, a shameless plug. I could have done this on the BBQ just as easily as the smoker. We put the fish on the smoker and let them get happy.

You can see in the picture below the juices are starting to ooze out and the fish is almost done. I added slices of lemon which made this dish delicious. If I didn’t have a lemon I would drizzle a little lemon juice on top at this point. I let the lemon cook just a little to get the flavor on the fish and then it was time to eat.

Looking so good! I don’t always have a set time for cooking salmon. I watch for the white juices to begin to bubble out and I know we are close.

On the tray and ready to go. The kids enjoyed this salmon which means, 2 thumbs up!

Honey Soy Glazed Salmon

Serves: 4

INGREDIENTS

1 TBS Honey

2 tsp Soy Sauce

1 1/2 tsp Olive Oil

Pepper to taste

Salt to taste

Lemon Slices

4 Salmon Fillets (about 1 inch thick)

Instructions

Mix honey, soy sauce, olive oil, pepper and salt in a bowl.

Use fingers or basting brush to spread mixture onto the salmon fillets.

Place on hot grill and cook approximately 15 minutes. This will depend on the thickness of your fillets. Watch for the juices like in the picture above.

Before removing from the grill, place lemon slices on the fillets.

Serve with grilled vegetables...Place fresh vegetables in a plastic bag, add some olive oil and shake to coat the veggies. Place on the hot grill and turn while cooking. Grill until cooked but still crunchy. Enjoy!
