Pan-Seared Lingcod/Halibut/Cod with Lemon Caper Sauce

Ingredients

For the Lingcod

  • 4 lingcod fillets (about 6 ounces each)

  • Salt and pepper to taste

  • 2 tablespoons olive oil

  • 1 tablespoon unsalted butter

For the Lemon Caper Sauce

  • 2 tablespoons unsalted butter

  • 2 tablespoons chopped shallots

  • 1/4 cup white wine (or vegetable or chicken broth)

  • Juice of 1 large lemon

  • 2 tablespoons capers, rinsed and drained

  • 1 tablespoon fresh parsley, chopped

Preparation
