Halibut with Warm Bacon Dressing

We took the family camping a couple of weekends ago up into the High Uintah Mountains of Utah. It was beautiful during the day and chilly at night, thank goodness for the cozy stove in the tent. The millions of stars reminded me of late August nights in Elfin Cove.

Kelly has a favorite halibut recipe that we decided we should take camping and enjoy over the camp stove. He has shared this recipe in vague terms over the years so finally, the recipe for you written down!

This recipe may sound tricky but I promise you that you will enjoy this again and again. Claire helped me with the preparation and managed to only hit the ground with one

piece of fish. Claire started by cutting our halibut pieces into 1 inch thick portions and salting and peppering the pieces. While she was doing this, in the dark I might add, I was working on the bacon.

I chopped the bacon before heading to the mountain because an ounce of prep at home is always better when camping. I was feeding 12 people so I had lots to cook. I browned the bacon in my pan and then removed the bacon leaving the grease.

In went the fish into the bacon fat...who doesn’t love bacon and halibut? I cooked the halibut until it was done and a little browned on each side.

I deviated from the recipe because one, it was dark and two, we were starving. The end product was delicious and required little technique on my part.

Once the halibut was cooked through I put it on a plate to rest. I added the cooked bacon back into the pan, added the rice vinegar and the fresh lemon juice. Once it was nice and hot I poured it over the halibut and served. I didn’t bring fresh parsley to put on top...we were camping after all...no, we didn’t miss it.

I didn’t get a picture of the finished product, partly because it was dark but mostly because it was gone before I got a chance. I will spare you a picture of empty plates. We served this with baked potatoes and salad...delicious! Although I don’t have a picture of the finished product, I do have a video link below showing you this recipe in all of its deliciousness!

Halibut with Warm Bacon Dressing

Tangy Smokey Bacon...mmmm...

Serves 2-3

INGREDIENTS

2 - 6oz halibut steaks (about 3/4 to 1 inch thick)

1/2 lemon

1/3 cup seasoned rice vinegar

4 strips of bacon

fresh parsley to taste (about 1/2 bunch)

salt and pepper to taste

Instructions

Cook bacon on medium low in heavy fry pan to render out the grease. While bacon is cooking, salt and pepper both sides of halibut.

Remove bacon from pan.

Increase heat to medium high and cook halibut. About 4 minutes per side until about 75% cooked. Do not over cook. When cooked remove and place on a plate.

Add rice vinegar to hot pan. Turn pan to low and add lemon juice and bacon bits. Stir once then add halibut to pan.

Add parsley and spoon the warm bacon dressing over the fish until fish is cooked through.

Plate fish and drizzle extra dressing on the fish.

The warm dressing would be great as a dressing for a salad without the fish.
